chicken pot pie

some of my friends have decided to have a weekly dinner party. every week we switch off making the meal. this week was the first time we did it & we decided to go first with chicken pot pie & peach cobbler!

the chicken pot pie called for:
1 lb chicken breast
1 c sliced carrots
1 c green peas
2-3 small potatoes or 1 c celery
1/3 c butter 
1/3 c chopped onion
1/3 c flour
1/2 t salt
1/4 t salt
1/4 t pepper
1/4 t celery seed
1 3/4 c chicken broth
2/3 c milk.
2 pie crusts 
we used a deep dish pie for the bottom & normal for the top
heat your oven to 425
in a large pot, combine chicken, carrots, peas & potatoes. add water, cover & boil till potatoes are soft. remove from heat, drain & set aside.
in the saucepan over medium heat, cook onions in butter until soft & translucent. stir in flour, salt, pepper &celery seed. stir in chicken broth & milk. simmer over medium-low heat until thick. remove from heat & set aside.
place the chicken mixture in bottom pie crust, pour hot liquid mixture over & cover with top crust, seal edges & make small slits along the top.
bake in oven for 30-35 minutes.

the original recipe found for chicken pot pie called for celery & celery seed. not everyone wanted celery so we substituted the celery with potatoes & we couldn't find celery seed.. so we used celery salt. also! instead of boiling with water, we used chicken broth to add more flavor & thickness. last but not least, before putting into the oven, we coated the top pie crust with egg yolk to get a golden brown color on top. 
it's delicious. & really easy to make. the trickiest part was adding the top pie crust without it breaking, but it's possible!
