BANANA MUFFINS!

i hate letting bananas go to waste, it's sort of a pet-peeve of mine, so whenever they get too soft to eat i like to make something out of this & this week it was banana muffins. they were truly so, so easy to make & absolutely delicious, i'd be lying if i didn't eat 3 the first day they were out of the oven... so good.
what you'll need: 

1/3 coconut oil

1/2 maple syrup or honey (i mixed the two cause i couldn't decide which i would rather use!)

2 eggs

1 cup packed mashed bananas

1/4 cup milk

1 teaspoon baking soda

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon cinnamon

1 3/4 cup flour (to make it healthier you can use whole wheat flour, but i just went with what we had)

1/3 cup oats

1/3 cup crushed walnuts

1. heat your oven to 325 degrees fahrenheit

2. in a large bowl mix your coconut oil & syrup/honey with a whisk until well blended, then beat in the eggs. mix in mashed bananas & milk then add the baking soda, vanilla, salt & cinnamon.

3. slowly add the flour & oats, make sure to mix well! once mixed add in any additional mix-ins, i added walnuts for some crunch.

4. pour the batter into your pre-greased muffin tins & sprinkle the tops with some oats. i also added a pinch of sugar to the top for a little added sweetness & it gave them a nice shimmery effect. bake for 25 minutes, or until a toothpick comes out clean.
